So, I don't really wanna farm, but, I still want to upgrade. Would it be possible to drop down to like 400 trophies, and almost NEVER get attacked by th7+? Just collecting from mines, not having to worry about raids

Not really, there are players with various strength all over the trophy ladder trying to find a sweet farming spot.
No where is immunity to raids.
If you drop down too far, you'll get your trophies pushed back up by trophy droppers anyway.

Already said I don't want to farm, and am going to live off collectors. Any helpful comments?
It's easy to avoid big raids actually, particularly if you have level 9 storages. All you do is leave your townhall outside and don't upgrade all your walls. Use barracks to hide elixier. Then each night before you log out, have a balance of less than 10k or so elixier and gold.
But if your storages are too big, between 300 and 400 is a good place to stay.
That doesn't sound very fun...
