With the 2-hour boosts, I will boost a few times a week at most, spread across my accounts. I have three accounts, have spent $25 on one and $20 on another, and close to buying gems on the third. So I might boost each account once or twice a week, or if I'm focussing on one account in particular, I'll boost that one account 3-4 times in a week, and let the other 2 sit idle.
With a 1-hour boost, I would boost twice a day (total, not per account). I would even be willing to pay 6 gems instead of 5, so the equivalent of 12 gems by the current rate of 10 gems per 2 hours. So right now I'm spending maybe 100-150 gems a week. With a 6-gem boost for 1 hour (including spell factor and hero), I'd spend 72 gems per day most likely, at least 5 days a week. My gem usage would go way up.
I don't have hard numbers, but I've seen this requested often enough to know that I'm not alone. Gem sales would increase, I'm fairly certain. Supercell probably knows this as well, but they either haven't figured out an interface for multiple boost options (the 2-hour boost should still be there as well), or they're afraid to tinker with their money-making flagship game.
