You'd be just fine upgrading now, OP, however if you just focused on barracks you could probably have them on there way to maxed in a week and done before your TH is finished, don't worry about you collectors too much.

I upgraded all barracks at th7. It's just nice to be able to have all of your barracks generating dragons at the same time, and besides that you might as well do it now so u dont have to do it later
I agree with zach, the necessity of completely maxing out everything before upgrading TH is overstated on these forums. TH8 loot is easy, and sitting at TH7 with full purple walls is a waste of time and gold for you. I went TH8 the minute I had purple walls, even though my point defenses were severely underleveled, and I don't regret it whatsoever. It just let me get skull walls and a level 3 DE drill that much sooner.
