The gap is usualy only that big on a revenge, as usually you are matched with someone closer to your cup range - (+ or - 200)

Probably a revenge and you were in a higher league.
The amount of trophies available is depended only on two factors:
Your Trophy count vs Their Trophy count.
So if you are at 2200 and the opponent is at 1900, they will be able to receive more trophies from you because they are in a lower league. Likewise, the opposite is true. If you attack someone in lower trophy ranges, you receive less trophies per star.
This prevents people from hitting their revenge list from 400+ trophies away and making a killing during a push. The higher your trophies, you may not get ANY trophies for a 3 star if you have too many trophies above your opponent.

The max is over 50 trophies. So everybody that you snipped to get there can revenge you at 40-50 trophies each time. Think about it when you snipe a TH9 or TH10 to get to higher trophies.
TH level as no impact on the amount of trophies you get. Only their current trophy count vs yours.
Every time I see a TH7 in crystal or master, I feel I need to destroy it. Even if it offers me no loot at all.
