They hide inside of the carrot/chicken/hog on the spit. That's how the army camps hold more troops when you upgrade them: they get more room when they need to hide during a defense.

They do not hide. Before the raid starts, the commander of the raiding army and the defending troops sign an agreement which states.
"With respect to our survival for future raids, we will abandon our posts and set all the traps, cannons and other defenses to auto attack. In return for this, we have to be spared from participating in battle. We will extend the same courtesy to you when we revenge attack your base. "
The people in the clan castle think too highly of themselves. They say "We have a castle for ourselves while you stroll in open fields". Please do not spare them.
They get really curious about that secret path in the woods when you log off... and they think you won't catch them sneaking off down there.
