How far should I max out my townhall 8?

I think you should wait. I'm a TH8 and Currently I have maxd wiz towers, mortars, cannons, and 1 tesla. The other two teslas are upgrading to 6, and all 3 ADs are upgrading to 6. My ATs are all level 9, and I'm going to get all of them to 10 before I go, since there is no real reason not to.

Adding a lvl 1 AQ and an xbow do not make up for the rest of your crappy defenses.

So you rather add +7 dps to your archer towers than adding two long range 55 dps buildings to your village (+ others).

Trust me, I originally decided to completely max TH8, but changed my mind at the end. I wish I had upgraded to TH9 even sooner, it's just soo easy to get and keep your loot.

I would say keep maxing until you get bored. If you are already bored it might be time to move on. At the end of the day it is just a game, you're not playing for sheep stations here and upgrading a TH "too soon" isn't going to cripple you for life.
