You cannot, starting again is only possible if you hard reset your device and use a new GC account
Sorry bud. You cant switch accounts, unless you get a new device.

Not sure if you are supposed to but...
I have 2 apple ids...
2 gamecentre id's.
If I want to switch accounts i go into settings/gamecentre/sign out...
Sign in with whichever account I want to play.
Doesn't take too long.
2 accounts - 1 Device.
If this is breach of terms I will remove post.
