Well engineered bases pose problem in war but they make war more interesting too.Every clan gets tough wars bt we try our best to give our 100%.So i don't think these engineered base are much of a problem.
The war matchups are horrible (I'm sick of facing max defense TH11's when I'm a lower level TH11) but somehow we have never faced a clan with all or even half engineered bases. One maybe two is the most we've ever seen. Is it not common in 15v15 or 20v20 wars?
There are more successful playstyles then engineering. We have a maxed out TH9 with 30-30 heroes. That TH9 does not need to be a TH10 or 11 to 3 star TH9s.
Adapting is about becoming a better attacker. You can do that by maxing out your offence, lots of practicing 3 star strategies, and maxing out your heroes. Yes you will meet with some tough opponents getting there, the trick is to learn from those matchups and get better.

I agree with these points, we are in the situation as OP mentioned.
Current war we are facing the enemy clan with 36 win streak with alot of engineered bases, sure we can adapt these so called lopsided bases as we have done in the past, but in current war there are too many and this leads to frustrate.
Current war 25v25
we 1 TH11, enemy 3 TH11s with max offensive n th10 & 9 level defense
we 4 TH10, enemy 2 th10
we 14 TH9 (1 rushed) enemy 17th9 (3 of them defenseless)
we rest th8 n th5s, enemy TH8s
