If you contact support via the cog wheel in the game, they should be able to see where those diamonds were used, and the fact that you know it happened on a certain day should help them narrow things down.
i know i always used to accidentally click the diamond button on crops or productions all the time because i clicked too fast.. they may have happened. go into settings and theres an option that makes the game confirm with you that you want to use your diamonds before they follow through with expediting the task. this has saved me A TON of accidental diamonds!
It's still far to easy to inadvertently spend diamonds. I accidentally purchased Tom for five days on my FEEDER farm last week! Yikes! The farm's a fairly low level and couldn't even use Tom for most of the items I needed. I ended up with an abundance of lobster, axes/saws, and goat cheese, though.
A least I knew where my diamonds went, and they did provide some benefit.
