The thing is, I'll be moving up to TH8 in a few weeks. And I want to push to Champs and get that shiny badge next to my name, after 1-2 weeks of trying to max my TH8 base/troops.
I want to achieve this preferably before/during Forum Elite V.
I was thinking GoWiVaPe, or GoHo. What do you guys suggest?

The trophy offers for TH8s are so low for TH8s past 2600 there's no way I'd try it.. Unless you want to use that army for four trophies then get three starred for -30.

What I would suggest is sniping during the day using BAM, and training GoWiPe overnight for that easy 2-3 stars on good bases... only attack a base with GoWiPe if it has 30+ cups available

BAM is just barch + minions, not very hard to learn. The minions are just in case there are mortars/cannons in range that cant attack air units
use gowipe only attack th8 and th9 attack bases that have 25 plus cups.
