Differing, but valid opinions
I guess I see it differently. When I go through the DD and fill boat crates, I see it as helping myself as this is how I get my boat scores as I rarely do boats of my own.
When I flag a crate it is because I want to help others who feel the same or are doing a help task.
On the rare occasion I accept a boat, it is because I am able to fill it myself. If I flag some of those crates it is for the above reason.
In the early days, I often could not fill a boat so would just fill what I needed to clear surplus from my barn and flag some crates so others could fill them for whatever reason.
Edit to add: I got the third Boat Score Hunter achievement recently but still fill the crates of strangers in the DD for the xp.
I have used my last of........

As I pointed out, there are those who will fill crates regardless, because they wish to gain from the transaction, and aren't concerned about whether the boat will be completed or not.
Others genuinely want want to help the boat owner and will do so even if it uses up their last item. The latter prefer to be reasonably certain the boat will be completed before they assist.
Different strokes for different boats.
I fall into the catagory of "will use my last (fill in the blank) to help a neighbor. Especially if that neighbor has helped me often in a pinch. I really try to help everyone as much as I can. But since I never have anything seafood related I might tiptoe away and be "out of town" for that boat. Lol
