I'm a th8 (lvl 59) and I only have one dark barracks as of right now (its level 1) and I just never see myseld using dark troops.. in farming I use barch, and in war I use drags/giants and spells. What's your thought on dark troops? Should I work on upgrading my dark troops and dark barracks or not?
you'll be fine for now, but as you go higher, you'd be looking for more attacks variation

YES, they are worth it, there is no pure elixir troops that can 3 star Th9+
You are really gimping yourself by not working on your dark troops, they are a huge part of the game. Even if you don't need them now you will certainly want them later, especially at TH9.

You will eventually get bored of using the same troops to farm with , I know I did and I know of plenty others. Minions are a great farming de troop for resources .. And just recently I have been having fun with valks ,only downfall with her is 8min train time don't go over well when loot raiding. 100 archers and 100 gobs have been my loot raisers lately and been fun but de troops have there areas of expertise were there needed and u will have fun with and see why there worth using up a builder to upgrade them.
What you can do with regular troops, you can do even better with a mixture of dark troops. Sure, you could go into a TH9 with Giants, Wizards, and Pekka. But you could go in with Golems, Wizards, and Pekka also. And believe me, Golems are true meat shields. Let us not forget about the Amazing Witch, which summons several weak barbrian like troops... not that great right? Unless you have multiple witchs. GoWiWi, will wipe out a lot of bases, especially with more armies being summoned as the old ones day on ya hahaha. To answer your question, it takes a long time, and is expensive, but it is worth it. You do not have to do everything day 1, but you will need them to progress.
There's the fact that hogs are pretty much one of your best war options as a TH8, as well as an essential core to many TH9 strats (Holo, Goho, Holowiwi, Gowihog,etc).
....So yes, I'd say they are worth it. Golems aren't so essential at TH8, but they are for TH9/10.
I'd at least get my dark barracks to lvl 2 for hogs for now, and start upgrading them.
Hogs and Drags are your bread and butter war troops as a Th8.
And if you farm, you are missing out on minions.
At some stage during th8 you will have to vary your war attacks. There comes a point when dragons lose their effectiveness. Golems & hogs give you more options in attack and later on minions will come into play. I have also seen higher levels use valks with devastating results.
BAM is the most effective farm strategy, minions are VERY usefull for ballonion in war as well, when you get badas*s lvl 6 loons. Golems are the 2nd most important dark troop at that level. So you need to upgrade these 2 troops asap. Hogs become more and more useless from th9. Imho arent worth it an upgrade considering how much DE you must spend on it and even more important, how much time.
