I don't think anything changed? I still see how many gems you get for completing an achievement. Not sure what's going on for you, but the one thing I can confirm is that you still get gems for completing achievements.
It may be that you're looking under profile (top left) instead of under the helper (right side) or whatever that villager is called that guides you through the first bit of the game.
nothing got changed.... coc not removed gems.... dont look at profile... look in achievements
