You don't really see anyone with Mohawks riding hogs or dragons flying in your daily commuter traffic either. It's a fantasy game. Besides kangaroo rider doesn't sound nearly as cool as hog rider.

You're 100% correct, OP, pigs aren't well known for jumping. It was for this exact reason that the "Pig Warrior" was scrapped during early Beta Testing (Though he may appear as a Boom Beach Troop). HOGS, however, are basically the LeBron James' of the porcine family, and have been know to clear heights of over 7 feet tall while saddled by black guys with awesome haircuts who make Rocky Balboa nervous.
