All at once is what I do too. But I believe that for defenses, it is best to do all at once. For collectors, it is better to do it one at a time, unless you're going on vacation or inactive.

It really depends on how active you are.
If you are a passive player and only attack 5-10 times a day, that will not be enough to keep your builders busy. If that is the case, then go ahead and max your collectors and mines now so that you can keep your builders more active.
If you are going to be active enough with attacks to keep your builders busy until your base is maxed without any builder down time, then upgrading your mines/collectors is a waste and you can save them for last.
For example, I have never made mines/collectors a priority, but have kept my builders busy without down time since November. I am now 9 upgrades (excluding mines/collectors/drills, which each have several upgrades left) away from maxing my base (until the next freaking patch which will have a bunch of freakishly insane build costs and times, but that's another topic). If I had wasted time on mines/collectors/drills, I would have to wait another couple of weeks for my defenses to be max level. My base has been stronger, earlier, and therefore have been able to protect my resources more easily over time than if my defenses had been several weeks behind.
So determine how often you are going to be able to attack for the duration of your upgrade cycle (7-10 months, depending on your activeness) and base it off of that.
I attack less now, as I am approaching max, as the build times are longer and I am a bit burned out on doing walls (since I've been th9, all I've done is the extra 25 walls (twice) to lvl8 and a whole 9 walls to lvl9). But for many months, I was attacking 30-40 times a day and maxing my storages before every builder, spending the excess on walls. I actually timed it perfectly and completed all walls and defenses before my th9 upgrade completed.
If you think you can be that active, ignore your mines/collectors. Otherwise max them to help with the long haul to your never ending base upgrades.

Everyone should max them, that is wear all the loot in the game comes from! Upgrading collectors improves coc's economy
I guess I should at least max the gold ones especially since as a non gemmer it gets quite pricey to max out walls and im the type of person that must have all my walls fully upgraded. Thanks for all the input guys. I guess the 432k you get from all maxed collectors is worth it in the long run especially for gold :-)
If you don't have anything else to upgrade, then why not? I suggest you should upgrade it.
I worked on one collector at a time. And I did it before they reduced the time. People suggesting that if you don't play much then it's better to upgrade the collectors are not really seeing the point. The sooner you max collectors the better. More income and also more over all hit points in your village. This will lead to attackers spending more time on your buildings. Regardless if you attack 30 times a day or 3 the extra resources will be the same.
I did 3 defenses at a time, one elixir upgrade, and one collector. It worked great. And now I'm gaining the benefits of max collectors. Which help out greatly at TH9.
