I have taken a look at the TH require to get a Dark Barrack at level 6 and it is TH9. So i'd say the requirement for it is TH10 in order to get Dark Barracks level 7. Also lab upgrades to max to level 8 so I'd have to say that a new TH11 may be needed. Or they just add a new Lab level lol. I change that Lab level 10 to 9! Thanks!
Aweosme idea!! I would also want this implemented.
The phoenix is ruled out all ready and the hydra is too OP. However in Greek mythology, Hercules used fire to defeat the hydra. It would make more sense for its weakness to be the inferno tower and its preferred target something else.

I love this idea but I feel like they are a little OP. For the phoenix either its health or it's dps has to go down and I think the health should because it comes back to life after it dies(which I totally agree with). Maybe drop its health down to 3,000ish? Its training cost should also be a bit higher since I bet at town hall 11 you will get a fourth de drill. Maybe a max phoenix should cost 1,000 de.
The hydra sounds awesome and is my favorite of the two. He sounds very well balanced since at level 5 each head has a tad bit less health than a giant and the hydra takes up the same space than 7 of them.
