If you went down to sub 200 (where if you log off for 5 minutes, you gain 500 trophies), could you potentially complete the achievement very quickly?
I believe this is how others have done it in the past. Although I still don't think they get it done "quickly".
Is it really worth all that work for just 100 gems?
If I 3 star all the other achievements maybe I'll try get unbreakable, but probably not...

It's possible, if you have nothing else to do. I am planning on getting that achievement in a month or two.
