What do people use gems on?

Its your money, but IMO this is a waste!

Im using mine to keep my pumps boosted to help with walls but I used them when I got to th9 for my xbows

I purely save mine to boost barracks, it is by far the best option. Buying resources and speeding up is ridiculously expensive, not worth it. You can easily gain 2,5million of each resource while boosting barracks and doing back-to-back raids with Barch as a TH9 or TH10 (or even a TH8)

Builders and finishing upgrades if i have ressources and no builder available.

Boosting in case of golden hour

Boosting in case of 1 gem boost

I may buy the black falg (silly but it looks good)

in the end i get mode gems from gemboxes and plants than needed

boosting is the most worth it for gems.
buying resource is the most not worth it

Boosting barracks. Use quick and efficient armies like BARCH, go to the right trophy range, and you will be racking millions every hour. I don't recommend speeding upgrades
