I know that being able to put multiple builders on one upgrade is ruled out, but why? In the long run, it is still the same total time for all upgrades. what is the big downside that i am missing.

What not always told why certain ideas are ruled out but I imagine it would be because it would lower the time spent on building a lot and well- somewhat cuts into Super Cells profits with builders for most people spend gems to buy all 5 builders. Having this feature would lower the demand for them.
Not really, if two builders halves the time it takes to upgrade and 5 builders increases the time by 500%, that is still a certain amount of build time per builder per building which would be the excact amount of time it currently is.
You have five buildings that take 5 days each, if 1 builder per, then they would all be finished in five days,
but if all five builders work, then one building would be finished each day, still ending in 5 totals days of build time
However, if you are not building more than one thing, and you have free builders, the inactivity of those builders is profit for supercell. Making things faster to upgrade by allowing you to use all builders on one project lowers the time and lowers the demand for gems.
I won't always have five building I want to upgrade (or can upgrade for that matter), so that's where the loss comes in.
