Yes, golem remains in the clan castle if part of it survives. This applies to the Lava Hound as well, if at least one pup survives, the whole thing survives for the next round.
How good of it for defense? Well, this is matter of opinion and also depends on what attacks you. I'll just say it could stall your army for a long long time if you don't have heavy fire power focus on it, and that could compromise your raid. Not always, but things could go wrong when there is a live CC troop in the base and you can't get rid of it/them.
If you have a hard to lure cc, golem or lava hound should be ok on defense, as they both take a fair amount of time and troops to deal with, and if the attacker is being mauled by defense towers at the same time, could be quite effective...
(I've had a lava hound turn a 2 star mass dragon defeat into a 1 star -- those pups did a job on one dragon, and led another away from TH -- sure same thing probably applies to golem)
Only time i've had a golem on defense, was when i got barched - was a lame attack that ended at 30% anyway, so not probably a real measure of its usefullness....:cool:
After the golem has died and split into golemites, it WILL NOT RETURN TO THE CASTLE
According to COC Wiki:
If you have a Golem in your Clan Castle, and it splits into Golemites during a defense, it will become a Golem again after the defense.

let's say somebody attacks you for 50% with bam and lured out the cc with a golem in it. ( For troll reasons or It's exposed)
5 minions, and about 30 seconds your golems are disappeared.
Golems as defence cc - yes please run that
