I know there is no such thing as a perfect defense but I want the best defense you can possible five at level 5 town hall. I've been losing a lot of battles with my setup so I need your help please.

Try putting your mortar and town hall behind 1 layer of walls, then put the rest of your defensive buildings around that and as many other buildings you can fit around a second layer of walls.

The ultimate defense for TH5 is to upgrade to TH6. I'm not saying to rush your townhall, but seriously, how long are you planning to stay a TH5. No need to waste brain power at this level.

Throw your TH outside in a corner because being in farming mode is the best thing for you at this point. If you're getting crushed all the time, you've likely climbed too high in trophies. Drop down to a more comfortable zone.
