Few notes based on my personal and somewhat recent experience.
I would upgrade cannons before archer towers. Cannons are cheaper and faster to upgrade. I think you'll find that your bane at TH8 is mass lvl 6 giants. No other "farming" troop is really an issue (perhaps mass lvl 6 barbs), and cannons really help. Plus, on a more subjective note, i know that i always think twice about attacking bases with solid gold cannons and solid pink archer towers.
I wish I had started my tesla upgrades earlier. Having to take 3 teslas to lvl 6 takes a long time (and they're not that expensive, which is a bonus). Teslas are absolutely devastating when leveled, and I'd devote a builder to upgrading them from the beginning.
Upgrade your clan castle as soon as possible, too. Five units on defense always helps.

I'd keep the new gold storage at lvl 5 for all (but the very end) of TH8. As far as I know, you'll never need more than 4 million gold until you are getting ready for TH9 and super expensive upgrades, like x-bows.
I upgraded my elixir storage to 5 at first, too. But you will want to take it all the way to lvl 11 for the second PEKKA upgrade. And, once you hit storage lvl 8, which holds 250 000 elixir, raids will be able to loot it for the max amount (67k with three storages) so you might as well take it all the way to lvl 11. personally, i've been swimming in elixir -- i've not farmed for it all and have been focusing on farming gold, yet i've always been able to keep up with my lab upgrades.
I am in the process of going to TH8 as well. I am currently level 63 and almost completely maxed. My Air Defense is only level 4, my Dark Barracks is only level 1 and two Elixir Colectors are 9/10. Other then that every thing is maxed. It will be done on Thursday and I have my own spreadsheet going :D Ha, with a name like Beancounter, you know I love spreadsheets!
Here are my thoughts on what to upgrade first and why:
1. Mortars Level 5 to 6. Three builders. I am going to bite the bullet and upgrade all three at the same time. Right off the bat. Mainly because level 6 Mortars will One Hit Kill level 6 Archers. Which is sweet!
2. Forth builder - Lab - duh! You need offense
3. Fifth builder - Archer Tower, Wizard Tower, Air Defense and walls. I am going to rotate through those items with this builder until the Mortar upgrades are done.
After the inital push, I am going to go for Canons to 9. Level 9 Cannons will OHK Lvl 6 Archers and lvl 5 Wallbreakers.
I am going to put off the Wizard Tower upgrades until after that point. To be honest, I do not think you gain much by going to Level 5 Wiz Towes. Even level 6 are just OK. Level 7 are amazing, but that is not until TH 9.
Just to clairfy on the Wizard Towers. There primary targets is going to be either mass barbs or goblins. Going from lvl 4 to 5 does not really improve our Hits To Kill Rate for them. It gets better at Lvl 6, but it still takes two hits to kill a lvl 4 or 5 goblin. You can get the same results with a lvl 4 Wiz Tower. At lvl 7 the Wiz Tower just mauls goblins with a one hit kill rate. But again that is not until TH9.
