What is the benefit of southern teasers over, let's say, a base with no open compartments? What are the advantages of using southern teasers and what compos do they defend well against?
The idea is to trick the enemy to attack from the south instead of the north. The north being strong and the South weak. Think of it as one big funnel.
Southern teasers don't work against smart people, but it's all about design. If they come from the north and you place your defense around the borders you can steer their attackers to move around the outside of the base and come up from the bottom instead of going straight to the core.
As for what they are good or weak against it depends how the layouts works.
I find southern teaser bases tend to be weak against balloonian from the south since there tends to be a lot of defenses clustered at the south and, depending on the base, this should leave the northern defenses out of range of the townhall.
Why would you want the enemy to attack from your weak side?
Anyways, the main purpose of a high level southern teaser base is to leave a large open compartment and fill it with storages. The defenses will draw golems towards the side instead of heading towards the core where the TH is. When the wizards/PEKKAs finish breaking down the storages, the golems are too far away to distract the defenses in the core. Voila
Southern teasers usually don't work, unless you're against someone who has no idea what they're doing. The top is made to look strong with a lot of walls but can be easily broken through with wall breakers and/or jump spell. The bottom looks weak without walls but troops get drawn to the sides because of all the buildings.
The reason for southern teasers is to attract the eyes to the southern end of the base as there are less walls. Most of the high damage defenses as well as traps and heroes usually are placed below the town hall ensuring a failure if you come with heavy ground. DO NOT USE A SOUTHERN TEASER. If a good attacker comes along they will have a higher chance of three starring you with a well planned attack from the top. With the new jump spell it is all too easy to get into the middle compartment from the top for an easy two star.
They defend well against heavy ground attack from the bottom. That's about it.
They're traps. They make you attack from the bottom and lose :)
Southern teasers are made to counter GoWiWi/Gowipe/ other golem + wiz + .... army comps. The general design is supposed to consist of a tough/ difficult-to-attack-from top half and an open bottom half. Which makes the bottom a preferable attacking side. the bottom half is usually rigged with many traps. e.g. spring traps vs wallbreakers, giant bombs vs wiz/ witches and others. funneling is key in the bottom half, because the goal is to funnel the golems off to the sides, as well as the rest of the enemy troops, leaving your town hall untouched. Some southern teasers have the town hall moved slightly to the south to attract attackers, while some have many WB barriers at the north, making the bottom more attractive for attackers. Most southern teasers have heavily defended tops to deter attackers from attacking there. Mixtures of these deterrents are also used. Gold/elixir storages are usually placed at the bottom for their high hit points and to make the bottom the more attractive side.
To sum up, the goal of a southern teaser base is made to counter GoWiPe/GoWiWi by tempting the attacker to attack from the bottom (hence the 'teaser' part of southern teaser) and funneling his/her troops off to the sides in order to protect the town hall and prevent a 2 star loss. The Southern teaser is popular among town hall 10s as a trophy pushing/ clan war base.

But, i always attack from the east or west points. Does fine for me, pretty certain 2* even against max walls max heroes.
I just started to use southern teaser base 'jellyfish'. Does well against Gowiwipe.
But i also do attack southern teaser base, with Gowiwpe, Hogs, farming troops. Etc. I have to say, compared to normal conventional bases, southern teaser base does have a part in good design bases. And its currently here to stay. Try it!!
But you need to do a lot of tweaking, same like conventional bases.
Here is my southern teaser. It works really well against everything except Gowipe and Gowiwi, but those attacks doesnt hit me more than once a month when I'm farming :)

...look towards early versions of the tempest by Orz, that is a base that looks like a southern teaserbut can do more than that. It's a TH8 lay out and needs a little re-positioning of defence to counter hogs.
But I am still using it as a TH9 and it works wonders! Attacks from the north and from the sides get funnled away from the TH (if it's centred) and the worst thing that happens,is that attackers get 39% or less and you get attacked twice in a night ;)
I have been up to master league several times with my tempest adaption and haven't been open to three starring even there! Since adopting it in march 2014 I have only been three starred twice !
