I've recently joined a new clan and they have a theory that by changing your game language you will change servers and find villages with more resources to steal.
I was wondering if someone could tell me if this is true or not.

nope.
you can take a look at this
It changes the global chat you're in and displays everything in a different language, but that's about it.
There is only one Clash of Clans server.
Nope. That's a myth.
theres multiplee servers for global chat, but nit the game
Not true.
It's close enough. It shows that after a language change I am connected back to the same server cluster.
Not 100% correct.
================================================== =========================
There are multiple servers in the server farm(s) that SuperCell uses. Some are log-on servers, some are chat servers and some are game servers. Changing your language changes your chat server. It also, however, restarts the game. You get the exact same effect from changing languages as you would get if you restarted the game.
What does not change, however, is the physical location you are connected to. All connections, that I have seen, regardless of the language selected connect to the same server farm.
So, if you wish to change your, for lack of a better term, battle queue, do anything that breaks then re-establishes your connection with SuperCell.
