Its all about target selection, you will probably fail at first but you get a feel for what is achievable with the army and spells that you have trained.
I am using loons (20-28) and minions to hunt DE at the moment and I tend to make several small point attacks to take max drills and the storage, if they are in range of the ITs then I'll maybe pop a rage if I have one handy. The loons shield the minions for long enough so they can pick off each drill. I then clean up with my QA for the 50%.
If all of the DE is in the storage and central then I will take down that side of the base, using the loons spread right along one side with minions deployed right behind them.
I try only to use enough troops to get the job done, that helps with cook times.
If I get bored waiting for loons to cook then I switch to Giant (14-16)/wbs (12)/Barch, its harder to get the 50% with this army but its strong enough to take on moderately defended bases with ITs. Most TH10 bases are pretty spread out so there are always areas that are vulnerable.
You can use the same attack strategy if you are taking exposed gold storages, you just need to select the right base. Using the giants/loons to shield higher DPS troops for long enough to take what you are after.
I am not saying its easy to farm TH10's, I skip loads of bases that I would never attempt, but its not really going to get much easier by going to TH10 yourself and as others have said you lose all the TH8 targets.
When I was early TH9 I focused on gold, farming in Gold 1 where its predominantly TH8 & 9's, once your lab is more advanced you can start taking on tougher opponents.
