Vaults are bases where you hold the majority, if not all of your important storages in one, central compartment. They generally work best for the higher town halls, and even then are risky. But the theory is, why lose some gold every time when you can protect it all most of the time.
A vault is a base design in which all the storage's are kept in one compartment of the base
Its a bad way to design your base.
Because goblins + heal spell will clean your vault in 10 seconds.
The reason why spread storages are usually considered better is that it is very hard for an attacker to take all the loot in a base without destroying almost every tower. With a vault I might get away with destroying a quarter of your towers and making a path to the core before looting it.
A vault is a base design in which most/all of your storages are kept in one large central compartment. I wouldn't recommend using a vault base design, as it is easier for an attacker to hit all of your storages.
I wouldn't recommend it but it is awesome getting the loot when attacking!!!
image example of a "vault" concept. Notice the storages are centered and protected? In this specific one, not ALL storages are centered. But whichever one you are trying to protect the most would be centered.

In a "vault" you have all your storage close and centered with heavy protection all around. The idea would be that the enemy must blow through all defenses to reach your primary resources.
A vault has pro's and con's... As you can see from some of the replys already. An army of goblins with heal spells could destroy a vault if you target correctly with WB's and some giants or something to distract the defenses.
I personally like to spread my resources out. I know my piddly TH7 defenses cant withstand a full out attack, so I spread them out and make the attacker decide which resource they want the most.
