There are tons of reasons why instantaneous building upgrades are a bad idea, but I'll stick to a few glaringly obvious ones:
1) This game is meant to be a marathon, not a sprint. That is part of the strategy. The fact that it takes longer and longer to build up your base makes it more and more important to choose your upgrades wisely. Hence, a 'strategy' game.
2) It's more profitable for Supercell this way. If you can upgrade everything instantly, you can max out TH10 in a couple months of hardcore farming. Then you'll get sick of the game and stop playing. Supercell makes much more money off of long-term customers as opposed to "hardcore for two months" customers.
3) Walls are probably instant upgrades because Supercell wants to throw us a bone. With all the long build times and the high cost and quantity of walls, the least they can do is make it instantly upgrade. Again, it's a nice strategic aspect of the game.
