It's funny that you mention that you think time is the most important resource, and I'm sure many people agree with you. But if you stop and ask yourself the question "why", then I tend to question it myself.
All that time does is help you get from beginning state (level zero brand new player) to end state (different for different people, but example, let's say maxed out th10 is the end state).
All that more builders does is help you get to end state faster, but all the while, you will have more buildings being upgraded and potentially unusable. For offensive units like army camps this doesn't matter, but most others like barracks, or any defensive units, they are unusable during upgrade. So having more builders means less effective defense against an attacker.
So what does time really get you? It gets you to end state faster, so that you can get sick of the game faster if you planned to quit shortly after achieving end state (and will need to find a new game to play). But if you have less builders, you'll be playing the game longer and defending your base better since less simultaneous buildings/units being upgraded.
So again, what does more builders really help with? It helps your progress faster and helps those with less patience feel less stagnant, which is perfectly fine, just more than one way to think of things. I'm happy with 4 builders, I find it a happy medium.
