Were they actually available, or were they grayed out?

They're keeping "ghost products" around by not collecting the money after they're sold. To get people to follow them. People see the grayed-out items and think they sell them all the time, but they don't.
They may have sold them once, and maybe not even for real. They could have sold them to friends who gave them back, or they might have been trades.
There have been several threads about it, including the one Patsgirldk linked.
Yes, dito to what everyone else said The tools probably never went to a random user, but to a neighbor or to their secondary farm or something. Shrug
And then there are those of us who really do sell all of that stuff. I trade when the opportunity arises, but I don't put a lot of effort into it, and I have to dump the stuff eventually to make room in my barn.

I think you guys always think the worse. I sold all my tools to make some monies recently. I definitely had over 60 BEMs and SEMs in the stall (not 80 screws though so it's not me) I did it just before bed then collected money when I got home from work next day. I had no underlying or sinister reason to leave them grey other than not having time to play.
I do the same as Hangleav. I put things up (including different expansion items) in RSS daily. Once they're sold, I leave them there and collect them the next time I put new items up. After collecting, I usually leave the shop completely empty for a while so if anyone does pass by, they might know I'm about to put new stock up (since my shop is usually grayed out the rest of the day). I also try to change where I put the new items up (different from their old position) so neighbours know that I'm selling everyday rather than keeping the same grayed out items.
Hangleav and choccamocha, the ppl being referred to by many of the elder players of Hay Day are ppl that never take down their sold expansion materials, they just keep adding to the crates already sold. Theirs are usually up there for weeks if not months. If you have someone who is a friend and you visit their farm, you will be able to tell if they are ghosting material on purpose or just left it up there until the next time they sell things in their RSS.
Yeh I know that... I've seen a few people on the boat leaderboard do it. Of course I never follow since I know I will hardly ever see new items being put up, maybe also because of the amount of followers they have so if anything is changed..they get bought instantly.
I think lucked into finding one of these stands while they were actually selling the stuff. I couldn't believe it. They were putting up 10-packs of nails, screws, bolts, deeds, etc., as well as diamond rings, necklaces, jams, jelly beans, soy sauce, etc. All at the far end of their stand. Hundreds and hundreds of items.
I followed them, and since then, the ghost products have remained at the right end of their stand, while they sell things like bread, berries, and popcorn from the left most bins.
