As you continue to level you'll unlock more products that require eggs. Sell them. Higher leveled players will buy them.
I quite if often find myself looking for eggs in the DD these days - i can't make them fast enough.😊 Holidae is right, more and more things arrive as you go up the levels. At level 66 you get mayo - which uses most of my eggs - followed later by egg sandwiches and egg sushi... Pleanty of cakes and baked goods arrive in earlier levels, but eggs suddenly become a valued resource in the 60s I have found. 😊
