Most buildings at Th8 roughly take 5-6 days.
Wizard Towers - 3 x 6 = 18 Days.
Archer Tower 6 x 6 = 36 days
Cannon 6 x 6 = 36 days
And so on.
Roughly 4 Months for defense,
Including everything new you get, and a load of loot I suppose.
But, I assume you will struggle with the loot a little.
So, 5 - 6 Months.

so I'm not really concerned on the gold
when i created this i was assuming that I had enough gold at all times to TRY to keep all builders busy
I also took right around 2.5 to 3 months to complete th8 including all lab upgrades. Just about to upgrade th now as last upgrades are finishing.
i had 4 builders though not the standard 2 so that will speed things up a tad. A 5th builder will make it even faster maybe cut it down to 2 months flat with normal farming and planning build's ahead.

as soon i hit town hall 8 i am going to keep a log and update it everytime i raid when I get raided what got built on this day

I have nothing better to do so:
Cannon: 5x3 + 5x4 = 35 Days
Archer Towers: 5x4 + 5x5 + 15d17h30m = 60d17h30m
Mortar: 3x5 = 15 Days
Air Defence: 2x8 + 23d5h = 39d5h
Wizard Tower : 2x4 + 2x5 + 15d12h = 33d12h
Hidden teslas: 2x8 + 2x10 + 2x 12 + 22 = 82 Days!
