harvesting sounds like a hay day term :) don't worry about it.
As for farming, this is a pretty basic term you should learn.
On offense, it means to attack bases with the goal of gaining resources, not for earning stars. When farming, you will sometimes win and sometimes lose battles, but what really matters is taking all their resources and be able to stay within a general trophy range that you are comfortable attacking in. Many farmers try to target bases with the majority of resources still in the collectors and mines, from inactive players who haven't collected.
On defense, it often means putting your townhall outside of your base, far off in a corner where you hope that attackers will attack your base only to take your town hall and an easy 1-star, while leaving your resources alone. You will lost a bit of trophies for the 1-star loss, but you can easily make those trophies back when you attack. From this, you will also earn a 12-hour shield, protecting you from multiple attacks while you are away from your game for a long period of time, such as over night.
The goal of farming both for offense and defense is to maximize resource raiding, and to protect resources stolen.

There are many people who do this, as you will see lower townhalls sitting in crystal. I personally think that trophy hunting shouldn't be done until at least TH8 and this is why:
If you're in a higher league (1800-2200) and you're attempting to upgrade your defenses, it will be much harder to destroy bases in that league than it would be if you were attacking bases around your own level. Find a good trophy range and stick to it to find easy gold.
Hybrids are a combination of the two, usually the townhall isn't as protected as well as the resources.
