I recommend upgrading them. It's nice to get up in the morning and have around 30k in each collector. Nice little bonus for sure.
I had no problem maxing TH8 and in fact got my skulls done early with lv9 mines. I had planned on maxing my pumps and mines while teslas and TH finished upgrading but i was overflowing gold and the only thing to spend it on was spells (pre-loot change.)
I definitely would have liked the extra loot in th9, but once you get going you want your builders doing more important things.
I would make get done in th7, if not th8 for sure.

It's because...
People think, if their collectors are high level, you get lots of gold and elixir stolen, and good for the raiders, but for you, it doesn't really matter as long as they don't touch your storages.
Also, when you go to TH10, your upgrades costs nearly 800 mil or full 800 mil.
The collectors will give you somewhat of help over the night when you have only 1000 gold and elixir in your storage.
Note: but again... do it when you have time. it takes a while to upgrade. I'm doing mine now, because I'm TH9 maxed out and waiting for TH10 is done. When it is done, all the builders are into other upgrades again.
In my view I think u should upgrade ur mines and elixir collectors to lvl 11 coz as u Know cost of upgrading walls and upgrading troops is very High so elixirs and mines can Help you to collect resources.
And lvl 11 Mines and elixirs gives alot resouces it will help u Alot
I believe enemies can steal 50% of loot from collectors. Not sure how much lvl 8 collectors hold, but lets say they hold 40k and lvl 11 collectors hold 150k. Therefore if they are both full enemies can steal 20k and 75k respectively, however, you still collect 20k and 75k. So it is definitely worth upgrading. Level 11 collectors do take a while to fill up though, so assuming you are decently active, this theoretical situation will never happen. <-- hope that answers the stealing more loot question.
More importantly, the production rate is much higher, so if you can collect it a few times a day, you will get much more gold and elixir from the mines. So there are really no downsides to upgrading.

Yes, absolutely, aside from the free resources (around 430k each day), it also helps the economy. Higher level collectors means more resources pumping into the system.
