My gold mine and elixir collector is lvl 8 all my TH is lvl 7 if I upgrade my mine and collector to lvl 11 I worry if people steal my mine and collector before I log in
I usually play in the morning and the evening only I don't play in the afternoon except on sunday
Just do it, in the long run it's very beneficial. Also, people can steal some loot from your collectors, but not all, so you're still going to make more loot that level 8 collectors. I wouldn't be surprised if someone after me posts something very mathematical about collector output or something that:p

You don't need to. They take too much time to upgrade and you'll gain much much more from farming. I easily completed my TH7 walls (and soon my TH8 walls) by just having level 6-7 mines/collectors. You better upgrade something else and just upgrade them if you still have spare builders' time before th8. There are lots of players with max walls and not a single maxed collector/mine
I don't think there's a right or wrong answer on this question.
I'm TH7 with just about everything max'd, 2 cannons and an air defence left to do, my collectors are all 8 with one or two 9, I'm going to sit at TH 7 and upgrade them, while doing them I'll be raiding with different army combinations and learning the best strategies.
I think this is a part of CoC people miss, on the surface it appears to be a game about raiding and upgrading, under the surface though there's tactics, and learning how to put down troops in the most efficient way.
In the past week when the need for gold has lessened because all my big upgrades are done I've been experimenting with attacks, I've started having success in getting into the centre of bases with different armies, and raiding DE has become so much easier, 6000 in two and a bit hours yesterday.
Long answer but in short, yes upgrade collectors and upgrade your experience with in the game at the same time.
It's all up to you. I do about 6 to 10 attacks per day so I decided to upgrade my collectors and mines to level 11 in order the fulfill my needs fo resources when I had my TH rosen to 7.
You can think about numbers and how long it takes to upgrade them but in the end you have to think practically. If you can stand the average cost of the upgrades only by farming, you can stay how you are. But if you can't, you should improve your production the quickest you can.
My advise is that you improve them before you rise TH to level 9. Till then you can rise about one collector or mine per month (just saying!! XD).
Resources will start to get scarce at higher TH 8 upto 10. This is where you'd wish you've maxed your mines and collectors most.
Of course, if you don't plan to upgrade to TH 9 and beyond, ever, there's no need to upgrade your collectors either.

From my past experience...
Up to Th7 it really isn't necessary. At least back when I was Th7, you could raid for that loot comfortably.
Th8 - At the end of Th8 I maxed my mines due to the skyrocketing costs of walls and upgrades in general. I didn't end up fully maxing my walls at Th8 (never intended to). I also did this to stall out and complete lab upgrades, Th8 features ALOT of lab upgrades. Very much worth the effort.
Th9 - First off I was very glad to have my mines as loot is a bit tougher. People may complain about the loot change but the options weren't great before, the only thing is your a prime target for Th10 hoggers if you have much loot. Anyway, I nearly maxed collectors at this level. I'd say it was worth it because I want to raid at a higher trophy level, Masters III is much more dependable for loot - but this also requires more elixir heavy armies.
Drills - I always maxed these, but they don't matter much until Th9. At Th8 they it just won't produce much but after than they are a huge help.
I think you should... I always kept mine max upgraded and this allowed me to get xbow and town hall ten a little bit easier... so as said before, in the long run it will be very helpful!!!
