I usually just boost my Barracks and go farming.
Unless I need sleep, I'll just finish an "almost-ready" upgrade. Then start a new one.

1. builders
2. lab / troops upgrade
3. finish upgrade when you have full storage, so you can dump them and start farming again
The only thing I use gems for is boosting barracks and spell factory, I have all 5 builders at TH8
I only use them when the 1 gem boosts are applied to the game.
