I am at level 62, and I trash any truck order that is less than 500 XP (unless it's for crops or a very common item only).
I don't ship any candy unless it's part of an order for at least 1000 XP.
I have not cracked the code on truck orders yet, but I DO know that the exact same order does not always sell for the same gold/XP split from one day to the next.
Yes, we do this too, unless it's for 400+XP and something we have a TON of and need to clear the barn. Exception: We fill no jam orders for less than 500XP EVER.
YES! we have noticed that too. Some truck orders have 1 choc bar for +1000XP, and some ask 2 for same. hard to then figure out what is a fair expectation for XP for candy.
I can help you crack part of the code. In general, the total worth of a truck order (not including raw crops) - and by total I mean Gold + XP - will be equal to the maximum gold you can earn from the same item by selling it in the stall. For instance, if you have a combination of goods that will sell for 100 gold native price in the stall, you can sell for maximum of 360 gold, and truck order will give you any combination of gold + XP that sums up to 360. The exact division is apparently more or less random between the two - so one order might give you 100 gold + 260 XP (with possible rounding errors) while the next identical might give you 180 gold + 180 XP.
There are then exceptions to this rule. Jewelry order will give you extra gold - Bracelets and Necklaces will give you a bit more than 4x the normal gold, while Diamond Rings will give you very close to 6x the normal gold value. In general, you should therefore sell Jewelry at the lowest possible XP because you will get many times the difference back on the gold. Not sure how numbers are for Metal Bar orders.
Candy on the other hand gives you a larger return on XP. Haven't got a full overview, but Chocolate seems to give you roughly 4x the XP you would normally get. Therefore, the general rule should be to always sell candy at lowest gold, because it will give you much more XP.
When all that is said, the numbers don't always add evenly, so I have a certain feeling the value of some things are assessed in what almost seems to be a random manner - as in not necessarily being actually random in the game, but the values typed in by the programmers being based on a more or less casual estimate rather than a strict coherence to sails value. But then again, might just be I haven't cracked the full algorithm yet.

If you are looking for fast level ups, sell jewelry and candy in truck orders for maximum XP - I usually don't take an order that offers less than 100XP per item. Jewelry and candy will generally give more than that.
If you are looking for fast coin, do the opposite.
bottom line, you're doing fine.
At least 900 xps. I just had a 2x jellybean 2x apple jam that gave 2450 xps. Was literally jumping for joy.

Order price/XP changes when you level up. Keep trashing at first to see other orders then when the old one comes back, you can decide what to do.
I don't use Tom and keep at least 1 of each candy to avoid being asked by visitor. 1000+ XP is wonderful but I won't wait for my candies to be available. I would do at least 4 times 500+XP in less than 24h (jelly beans).
