You can PM people by going to notifications at the top right of this screen and to your inbox and send a message using their forum name.
To add people through the game centre you need their game centre id which is often found in their signature. For example mine is there as gymgirl4a. When you go into game centre you go to 'friends' and at the top left there is an 'add' button which will bring ups a message screen, your type their gc id in and you can add a message - have a go and let me know if you need any further help.
When you have a pm here usually the 'notification' button will highlight.

Would you mind very much being my Guinea pig, lol. i have a lot, a lot of bolts and big boards lets just say my barn size is ridiculous and i'm a hoarder, if you wouldn't mind i'd happily give to you to help others who need them, i find putting them up for sale that only a certain few get them which is why i suppose i have so many because i like the idea of fair play, everyone having a fair shot rather than a few waiting there until i put them in the shop

That is very generous of you, Ani. I am confused, though, on your saying that putting them up for sale "only a certain few get them". Are you advertising in the Daily Dirt newspaper (DD)? Just putting items into your Road Side Stand (RSS) limits the the goods to your neighbors on your friends tab (those you've friended through GC of FB) so the sale is restricted. However, taking out an ad places your items in the newpaper and exposes them to thousands of players.

Both really, i know when i advertise it should be anyone's game but i find if i put 50 up either 1 person comes in and takes all or they are taken before the advert goes up, it shouldn't bother me i know but it does i'd so like to give them away and i do mean give as in 1 coin for 10 and know that people who are sitting frustrated at not getting their upgrade are getting what they need, i have 150 of each spare

Ah, I understand now. I don't have nearly as much as you, only a dozen at a time of each item. I solve the "fair distribution" issue by putting the items out in small lots at a time, spread out through the day, and split between neighbors, the DD, and anyone I'm sponsoring to expand land at the moment. This allows me to get an evenly fair number into the most hands. Now I'm trying to figure out how to stretch that fair distribution out even further so I can help out on the Smiley, Pay it Forward thread.

Wonderful thread, i'm a u.k player and realise the time difference with others, The getting in sync to arrange a sale to many others would boggle my already boggled mind and i'm a tech idiot, really i am, so if gymgirl is willing to forward them on maybe by request on this thread or by p.m that'd be great
