Experiment is underway.
As long as the booster is still active, anything you plant will be grown at the reduced time. Even if there is only 1 minute left on the booster.
the same is true for products in the 'in production' slot on the queue - like jam and candy - if you start jellybeans in the last 5 minutes of a candy machine booster, it will cook at boosted time.

Momscar let me know the results of your experiment, though it sounds like it works the way I was hoping.
The important point here is that, if you plant strategically, you can get a lot more out of a booster than its face value would suggest...
It was me that was trying to document it, but my screenshot does not provide proof for what I already know. The harvest tasks cannot be documented.
the best way to use a crop booster us to plant to the bitter end and all will get the boosted time.
if you can manage using a crop booster for a derby task, the task is a breeze.

I no longer try documenting stuff like this, as I always forget I'm doing it 😖
However, from the little bits I have noticed it appears to be as random as other things in HD. Some machines seem to do one thing and others something different. Same with crops. Same with trees. So, just because onions do one thing, don't expect tomatoes to do the same IME. It would be really interesting if someone tried every tree/crop/machine & documented it.

For what it's worth, just to finish my own small experience with this:
I filled my entire field with onions 30 seconds before the end of the boost, and they stayed growing at the faster rate finishing in 4 hours instead of 5, which was nice.
SmallChange, normally I just play, booster or not, and let the game do whatever it wants to. I was curious to try and document what actually happens. Well the jam maker turned out 1 way, without the entire queue getting boosted, but now it seems like the ice cream and soup kitchen stayed boosted for what was in the queue.
