When you fully serve a Townie, they give you another drop! (LEM, SEM, BEM, TEM, axe/saw/mining items)
But the town also comes with yet another set of expansions and they do ask for your products from your barn. You can turn them away though! Maybe people solely serve 1 and 2 building Townies, making it easier to manage.
It's a personal preference. The town is my personal favorite, so I love it! But there is no "rule" that you have to participate! Do what works for you.
I use the town all the time. I'm a big fan.
The first big benefit is you get XP from every townie that completes a building. You don't have to serve them fully to get the XP. I send them away as soon as the ask for something I don't have (or 10 beeswax! Some townies are so greedy!). I'm not too bothered about fully serving them, I just love the XP.
I also love the town Derby tasks - they are quick and easy to complete.
Failing that there is always the sanctuary to open ....
At first, they seem quite demanding. I would send away the ones who want too much.
after you build up in town, you will find many benefits. Having the sea chests to open, usually at least 2 open ones per visit (go to a hoodies town as well), and the drops are great! Once you get in a groove, the tasks are quite easy to prepare for.
i don't even look at what I am giving them anymore, but I also don't do many 2 and 3 shop visitors... Just the sanctuary ones.
It can give you plenty of xp to lvl up and are really easy derby tasks if you stack the townies. But if you don't want to play it you don't have to. I have been playing hay day for years and have only just started playing town in the last 2 months. I used to play it when they first added it to the game but soon I found it over whelming especially because I was at a lower lvl and didn't (still don't) have a very large barn. SO I quit the town. I lvl'd up just as quickly and got all the drop/coin I needed from other parts of the game. So if you don't want to you don't have to. But now that I returned it is pretty fun.
The town offers a unique experience to the game, where townies generally request reasonable quantities of items and you can earn bonus items in the process. :)
The downside is, it's generally slow. The trains slow, managing townies is slow, finding personal train passengers is slow, Sanctuary is slow... I really hope SuperCell do something to improve the gameplay here.
As much as I love the town, sometimes I just don't want to go there due to it's cumbersome nature.
I love the town. It will take time to get everything you need for town, but in the long run you'll see that it can be rewarding and fun!:)

Town is great, like some kind of a truck station with multiple trucks. Townies will wait forever to get served. And they give you presents when fully served.
Personally, i have built up my town some, had fun but stopped because it made me leveling up too fast, unlocking products i couldnt buy machines for.
All in all i think the town is a fantastic addon, lots of fun to have, hilarious townies, lots to expand, land, shops, trains etc.More room to play with deco too. Did i mention Thre R Trainzz? ☺
I know what you mean, but didn't know we got expansion points after a townie a building; I always thought that is lost, once you send them packing..
I send away anyone asking for a pasta dish (pasta kitchen), tea (tea stand), hot dogs (hot dog stand), and taco kitchen, because I don't have those machines, although I do have the coins to get them.
I also avoid anyone asking for pizza, because I don't make the pizzas in the bakery. Its always full in making bread muffins, etc. So I gave up on making the pizzas. That has gone on for no the if not over a year!
