You will have to figure this out during gameplay. If you find you're using or selling a lot of eggs, it will be worth it. If not, maybe at a later time! :)
Eggs are quite easy to buy, but if you wish to do your own, go for it.
They will ill always be there to buy at anytime
But they are pretty expensive to buy and im always pretty low on eggs so o think ill go with 3 and if i need more bump up to 6

I always bought my eggs because the other animals needed the feed slots more. But if you find them too expensive i suggest you get all the chickens you can. I use well over a hundred eggs a day on my farm. I cant remember how many i used when i was starting out but i do know they are one of the most necessary animal products on the farm.
You are asking a very good question. Once you buy "production" animals, you can't "store" them, so being deliberate about how many you need is very wise.
I have 2 pens of 6 chickens, 2 pens of 5 pigs, 2 pens of 5 sheep, 2 pens of 4 goats, and all 3 pens of 5 cows.
If I had it to do over again, I would probably limit my production animals to the following:
- 2 pens of 6 chickens. I like the animation of the chickens and their pens are small. As has been noted, you can always buy eggs. I think a lot of us regularly buy eggs. It mostly has to do with whether you can manage to produce enough feed for them as well as your other animals.
- 2 pens of pigs. I originally bought just 9 because that was a multiple of the 3 feeds that the feed machine produces. When the Derby was introduced, I bought the 10th pig in order to do feed tasks. Not worth it. I wish I still had 9 pigs. The other reason to have pigs is that the dogs/puppies eat bacon. I frequently buy bacon when I see it for sale to feed my dogs. Their gifts are really important to me. No way can I imagine "needing" the 3rd pen of pigs.
- 2 pens of sheep. I like the animation of the sheep. I usually can sell extra wool even with just 2 pens. Like the pigs, I originally bought just 9. Wish I still had just 9. No possible need for the 3rd pen of sheep; it would just take up space and require more feed. (Some people hide their surplus animal pens behind trees so they don't have to look at animals in discomfort.)
- 1 pen of goats. Usually I have goat's milk to sell. It's possible I would have eventually bought the second pen, but I probably could have survived with just 6 goats. Do NOT like their animation. My goat pens are hidden.
- 3 pens of cows. You absolutely need all the cows you can get. You need all the cow dairy products you can make. Very few people wind up with surplus dairy products.
As others have said, it all depends on how you like to operate your farm. The logjam for animals, and something you will periodically see threads about is "how do I juggle production of feed for all my animals?" With the animals I have, I very rarely run out of feed. Over time, I've fully expanded all the slots (9 each) on my feed machines. However, I was able to log in often enough when I had fewer slots to keep my animals fed. Looking at hungry animals is a bummer.

i think the chicken coupe is a good investment, it lets the chickens get around the farm and is good for morale.
