At high levels, 100+, what is a good amount of each good to stock? Naturally I would assume you would always have more dairy, sugar, and sauce products than sushi. But what is considered the normal amount to have as the minimum for different items?

It really depends on your barn, some of 100+ players have barns around 1,500; others around 5,000.
I try to keep ten of everything. Which turns into 12. And then 20.... Plus 50 each sugar and dairy item.
It's a mess! ;)

I'm not plus 100 and I have a relatively small barn of 800 (because I stop upgrading for sometime) but I have a base of 5 for all products other than the obvi dairy/sugar, jams, sauces, honey, and breads.
This seems to work very well for me because since I have all the machines and most of the products they make my orders are spread out pretty evenly so I am never in a bind when it come to my amounts.
Boats ask for either 8 or 6 products and then usually an easy one like sauce/jam or a plant. So I usually only have 4 boxes left undone which I can just flag for help.
Then truck orders at max either ask for 5 of a product or a ridiculous amount like 30 popcorn. So I am either buy the popcorn/corn bread/bread/sweater (which are the only ones that ask for ridic amounts) or I trash the request.
So the 5 standard seems to work impeccably well for me and I have been using it for about a year so my analysis on the patterns of the game are pretty concrete. :)
Ten/twelve is a minimum. I have 70+ breads, red popcorn, pasta and noodles. 20 seems to be the new cake number. 20+ of the other popcorns. 30+ of wax and honey. 50 or so saws and axes and 30 of each mining item. And then there are BEMs and SEMs....
But I have plenty of room for shopping, which is my number one requirement!
I keep 10 for final products and up to 50 for basic ingredient like cheese, butter, sugar, etc
My barn is 3300. I try to keep 15-20 of each IN the barn. But there is always lots on the ground at any given time. As Raelet said, bread, red popcorn, noodles you need to keep more. I try to keep feed on the ground, and pick it up as I need it.
There are items that you don't use much of, like candles and sushi and certain sandwiches, so I am not concerned if they fall below 15.
Much will depend on how you play. I know people that will see what the next boat will need and start cooking it then. Personally, if I'm going to fill a boat, I want to fill it and send it ASAP.
My barn is 2900. I try to keep at least 15 of each product. Plus. however much cheese, sugar, and milk I can fit in among it all. Obviously, if your holding onto upgrade items, mining, saws/axes too, it fills up fast.
