The size i use for my sig's are 850x150 (LxW of course)
There is lots to start with, i could not find any good videos since most just explain how a tool work, and some dont even edit them, but start by learning how layers work, and how the different tools work, so you know how you are going to make something in GIMP. Also watch diffrent tutorials, so you know wich tools will work to get a specific effect, watch youtube videos, they show you how its done, much easier than pictures

To save your final image, you need to press the button called "Export to..." The one you press must be "Save as..." and if you click that you will save the GIMP file so you can edit in it thats why :)

I did not get the minion in the lv you wanted, but i hope its ok? i could not find any pictures where it was big enough, if i begin to make stuff bigge the qaulity is goin' lower :)
